How Sift screens. Every ingredient — typed, from the library, or AI-generated — is matched against a database compiled from publicly available guidance by the Celiac Disease Foundation, Beyond Celiac, the NIDDK, the Celiac Disease Center at Columbia University, and Boston Children's Hospital. Known gluten sources are removed or swapped; brand-dependent items are flagged for label verification.

This database is an early draft compiled June 2026 and has not yet been reviewed by a celiac-specialist registered dietitian. It is not medical advice. AI-generated recipes are screened by the same engine, but AI can be wrong — treat every flagged item, and any unfamiliar ingredient, as something to verify before eating. FDA gluten-free labeling requires <20 ppm gluten (21 CFR 101.91).
